Accordion Potatoes

1. Peel the potatoes and cut the ends off so the potatoes are more rectangular shaped. Slice them into pieces that are a little under an inch thick.
2. Place the potato slices in between two chopsticks or metal straws and thinly slice them. Flip the potato over and do the same thing, but slice diagonally.
3. In a bowl, combine: olive oil, Italian seasoning, onion powder, garlic powder, smoked paprika, salt, pepper, and parmesan cheese.
4. Place the potatoes onto a metal baking sheet and brush the mixture onto both sides of the potatoes.
5. Bake on 400ºF for 30-35 minutes.
