Banana Nice Cream Snickers Bars

1. In a food processor, blend frozen bananas and peanut butter together until it’s perfectly creamy with no banana chunks. If you’re having a hard time getting a smooth consistency, let the bananas defrost for 10-15 minutes before you blend.
2. Scoop the mixture into a parchment lined loaf pan and top with peanuts and melted caramel sauce. Let freeze for at least 4 hours.
3. When the banana mixture is fully frozen, cut into even rectangles and place on a parchment lined baking sheet. Put them back in the freezer while you get the chocolate mixture ready.
4. In a microwave safe bowl, combine chocolate chips and coconut oil and microwave in 30 second increments until the chocolate is fully melted and smooth.
5. Coat the bars in the chocolate and place them back onto the parchment lined baking sheet.
6. Place in the freezer for another 30 minutes to fully set, and enjoy!
