Creamy Pesto Pasta Salad

1. Start by making your pesto (or you can use store bought!). In a blender or food processor, combine: basil, pine nuts, parmesan, garlic clove, olive oil, and black pepper.
2. Boil your pasta and let it fully cool.
3. Mix together mayo, pesto, lemon juice, salt, and pepper. Pour in your cooled pasta, parmesan cheese, tomatoes, and mozzarella balls.
4. In a pan on medium heat, toast the pine nuts until they’re golden brown (about 4 minutes). Continuously stir them so they don’t burn. Then, sprinkle them onto the pasta salad. Enjoy!
