Italian Mother's Chicken Noodle Soup Base & Soup

To make the soup base:

1. Sauté 2 cups of onions, 2 cups of celery, 2 cups of carrots, and 4 garlic cloves with a drizzle of olive oil. Cover and cook for about 20 minutes, or until soft.
2. Blend the sautéed vegetables with 2 cups of bone broth (or low-sodium chicken broth).
3. Freeze the blended base in cubes for future use.

To make the chicken noodle soup from the base:

When you’re ready to make chicken noodle soup, take a few cubes of the frozen base, add some more broth (about 4 cups for a standard pot of soup), shredded chicken, pasta, salt, pepper, and any other seasonings you like. Bring to a simmer until the pasta is cooked and the soup is heated through. Enjoy & stay healthy!
