A delicious Juicy Lucy Meatball Sub featuring homemade cheese-stuffed meatballs, a tangy mac sauce, and sweet caramelized onions, all assembled on a sub roll with fresh lettuce and tomatoes.
1. To make the meatballs, combine: ground beef, panko breadcrumbs, an egg, tomato paste, worcestershire sauce, and all of your seasonings (salt, pepper, onion powder, garlic powder, paprika). Mix together and form into balls. Make a hole in the middle of each meatball with your finger, place a cube of Truly Grass Fed Maker’s Blend Cheese, and cover the hole. Place the meatballs on a sheet pan with a drizzle of olive oil and bake on 375ºF for 18 minutes, or until they reach 160ºF internally.
2. While the meatballs are in the oven, let’s make our caramelized onions. Sauté thinly sliced yellow onions in a pan on medium-low heat with a drizzle of olive oil for 20 minutes. To help speed up the caramelizing process, add a drizzle of balsamic glaze to the onions.
3. To make the mac sauce, mix together: mayo, sweet relish, ketchup, dijon, white vinegar, and your seasonings (onion powder, garlic powder, pepper, salt).
4. When the meatballs are fully cooked, add them to your sub roll. Top with caramelized onions, chopped lettuce, mac sauce, and chopped tomatoes. Enjoy!
