Ah, meatloaf…you either love it or hate it. I’m convinced that everyone who hates meatloaf has just never had a good one. If you’re brave enough to try again, prep these mini meatloaves for the freezer for some easy weeknight meals!
1. In a large mixing bowl, combine: ground beef, eggs, onions, garlic, tomato paste, breadcrumbs, and seasonings. Form into 6 mini meatloaves.
2. If you’re prepping them for the freezer, wrap the raw meatloaves in plastic wrap and store in a freezer bag.
3. When you’re ready to make them, defrost the mini meatloaf (I suggest letting it defrost in the fridge). Top the raw meatloaf with your BBQ sauce/ketchup mixture (combined in a 1:1 ratio). Bake on a sheet pan (with a little drizzle of olive oil underneath) on 375ºF for 25-30 minutes, or until the internal temperature reaches 160ºF.
