My favorite way to make tomato sauce is to roast the tomatoes in the oven with lots of garlic and onions. Roasting the tomatoes allows them to naturally sweeten and develop a nice flavor, without having that tangy taste you sometimes get when making tomato sauce on the stove. Try it out and let me know what you think!

Instructions

1. Preheat your oven to 350º. Add tomatoes, garlic, and onions to a baking dish. Cover with olive oil and season with salt and pepper. Bake for 90 minutes. If it starts to dry out in the oven, add a little more olive oil and stir periodically.
2. Take the tomatoes out of the oven and let them cool. Then, add them to a food processor with a big handful of fresh basil and purée until completely smooth.
3. Add the sauce to your cooked pasta and top with grated pecorino romano cheese.
