Peppermint Hot Cocoa Cookies

1. Preheat the oven to 350ºF and line cookie sheets with parchment paper.
2. Melt butter in a microwave-safe bowl and add brown sugar. Whisk the butter and brown sugar together with an electric mixer for 2 minutes.
3. Add in the egg whites, vanilla extract, and peppermint extract. Whisk for 2 minutes.
4. Add in flour, baking soda, kosher salt, and cocoa powder. Mix well with a spatula. Then, mix in 1 cup of dark chocolate chips, and 1 cup of mini marshmallows.
5. Refrigerate the cookie dough for one hour, or until firm. Then, scoop into 24 balls and place on the parchment paper-lined cookie sheets. Add a sprinkle of crushed candy canes, a few chocolate chips, and mini marshmallows.
6. Bake on 350ºF for 11 minutes. Remove from oven and transfer to a cooling rack.
7. Melt the remaining 1/4 cup of chocolate chips in a microwave-safe bowl. Use a spoon to drizzle the melted chocolate onto the cookies and top with the remaining crushed candy canes.
