Snow Day Chili

1. In a large pot, add chopped poblano peppers and sauté in olive oil for 10 minutes or so to “sweat” the pepper or it’ll be super spicy. (If you like spicy, sauté for less time).
2. Add chopped onions and garlic and sauté.
3. Add ground meat and cook through.
4. Add beans, crushed tomatoes, and corn.
5. Season with spices. I like to add the spices and taste as I go.
6. Simmer for a few hours to let the flavors absorb or cook in an instant pot if you’re looking for a quick meal.
