Turkey Noodle Soup

1. In a large pot, drizzle olive oil. Add carrots, onions, and celery. Sauté for 9 minutes on medium low.
2. Add garlic and sauté for 1 minute.
3. Add 6 cups of broth to the veggies and bring to a boil. Simmer for 20 minutes until the vegetables are softened.
4. Now, it’s time to blend the veggies. I like using an immersion blender because it’s super easy and less dangerous than adding the hot veggies and broth into a blender, but use whatever you have! Blend until completely smooth.
5. Add 2 more cups of broth, your turkey, and noodles.
6. Add salt, pepper, onion powder, Italian seasoning, garlic powder, and parmesan cheese.
