Need another way to use up your leftover Thanksgiving turkey? This easy skillet meal follows almost the same recipe as the turkey pot pie I posted last week, but this time we’re adding egg noodles for the ultimate comfort meal!
1. Chop all the vegetables and start boiling the water for the egg noodles.
2. In a large pan, drizzle olive oil. Add carrots, celery, and onions. Sauté for 8 minutes on medium heat. You can add extra olive oil while sautéing if your veggies start to stick.
3. Add garlic and sauté for 1 minute.
4. Turn to medium low and add flour and butter. Mix well. Then, add broth, half & half, spices, turkey, and peas. Let simmer for a few minutes to thicken.
5. Add in the cooked egg noodles and parmesan cheese. Be sure to save your pasta water in case the mixture needs a little moisture.
